- Marie Biscuit Chocolate Cake
Ingredients: 300 gms Marie Biscuits, 30 gms butter, 1 cup milk, 15 gms cocoa powder, 120 gms powdered sugar, 200 gms melted chocolate, and some crushed nuts such as almonds, cashews, and pistachios (optional) for garnishing.
Method:
- In a mixer, grind the Marie biscuits to a fine powder and remove them in a mixing bowl.
- Now add cocoa powder and powdered sugar to the grounded biscuits. Mix them thoroughly.
- Add 1 cup milk and fold the ingredients into a rich brown batter.
- Slowly introduce melted butter into the batter. Once all the butter has been gradually introduced into the batter, place it on a plastic foil. Roll the plastic foil into a cylindrical shape ensuring the batter is completely covered with the foil. Place the covered batter in the freezer.
- Once the chocolate batter has frozen into a soft solid shape, serve it by pouring over melted chocolate. Garnish with some nuts.
- No-Bake Chocolate Cheesecake
Ingredients: 200 gms crushed chocolate cookies, 100 gms melted butter, 500 gm softened cream cheese, 200 gm melted dark chocolate, 100 gms powdered sugar, 1 tbsp vanilla extract, and 200 ml heavy whipped cream.
Method:
- Mix the crushed cookies with melted butter and press into the base of a springform pan.
- Beat the cream cheese until smooth. Add the melted chocolate, powdered sugar, and vanilla extract, and mix until combined.
- Gently fold in the whipped cream until fully incorporated.
- Pour the mixture over the cookie base, smooth the top, and refrigerate for at least 4 hours or until set.
- Garnish with chocolate shavings or fresh berries before serving.
- No-Bake Chocolate Oatmeal Cookies
Ingredients: 1 ¾ cups granulated sugar, ½ cup milk, ½ cup unsalted butter, ¼ cup unsweetened cocoa powder, ½ cup peanut butter, 1 tsp vanilla extract, and 3 cups quick-cooking oats.
Instructions:
- Combine sugar, milk, butter, and cocoa powder in a Vinod Hard Anodised American Sauce Pan. Bring the concoction to a boil and cook for 1 minute. Switch off the gas.
- Add peanut butter and vanilla and stir continuously until smooth.
- Add oats and mix until well combined.
- Drop spoonfuls of the mixture onto waxed paper and let cool until set.
- Chocolate Coconut Truffles
Ingredients: 2 cups shredded coconut, ½ cup coconut oil, 1/3 cup honey, 1 tsp vanilla extract and 200g melted dark chocolate.
Instructions:
- In a mixing bowl, combine shredded coconut, coconut oil, honey, and vanilla extract until thoroughly mixed.
- By rolling the mixture between your two palms, shape them into small balls and place them on a baking sheet lined with parchment paper.
- Freeze for 20 minutes.
- Dip each ball into melted chocolate and return to the parchment paper.
- Refrigerate until the chocolate is set.
