This recipe includes a mix of bell peppers, broccoli, carrots, snap peas, and mushrooms, but zucchini, cauliflower, baby corn, or even spinach would be fantastic additions. The key is to chop the vegetables into bite-sized pieces for even cooking and easy eating.

Here's what you'll need to whip up this delicious kadai vegetable stir-fry:

Ingredients:

  • 2 tablespoons vegetable oil

  • 1 medium onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 inch ginger, grated

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 1 cup broccoli florets

  • 1 cup carrot sticks, thinly sliced

  • 1 cup snap peas

  • 1 cup mushrooms, sliced

  • 1 teaspoon sesame oil

  • 1/2 teaspoon red chili flakes (optional)

  • Salt and pepper to taste

  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Wash and chop all your vegetables. Mince the garlic and grate the ginger. Having all your ingredients prepped and ready is crucial for a quick stir-fry.

  2. Heat the vegetable oil in your kadai over medium-high heat. A good quality kadai, like the ones from Vinod Cookware, will heat up quickly and evenly, which is essential for stir-frying.

  3. Add the sliced onion to the hot oil and sauté until translucent. Then, add the minced garlic and grated ginger and sauté for another minute.

  4. Add the harder vegetables like carrots and broccoli florets to the kadai and stir-fry for 2-3 minutes. Then, add the bell peppers and mushrooms and continue to stir-fry for another 2-3 minutes. Finally, add the snap peas and stir-fry for one last minute. The goal is to keep the vegetables crisp-tender.

  5. Pour in the sauces of your choice (if using) and stir well to coat the vegetables. Add the sesame oil and red chili flakes (if using) and give it another quick stir.

  6. Season with salt and pepper to taste. Give everything a final toss.
