Kickstart the New Year with 5 Healthy Breakfast Recipes

If getting healthier or simply sticking to eating healthy is your resolution for New Year 2022, then we are here to help you achieve your goal. We have collated five healthy breakfast recipes for you to kickstart this year of health!

 

  1. Appam

 

Ingredients: 2 cups powdered and roasted oats, 2 cups curd, ½ cup water, finely chopped vegetables of your choice (onion, tomato, capsicum, or carrot), 1 tsp oil, salt to taste.

 

Method:

Mix the curd and the oats together in a mixing bowl. Keep it aside for 20-25mins. Now add water to it to make the batter little thicker. Ensure it has a runny consistency. Add the chopped vegetables, salt, and mix everything well. Heat the Panniyarakkal, grease it with oil and pour the batter carefully. Cover it with a lid. Cook for 5-7 minutes. Flip each of the appams, and cook on the other side. Gorge on yummy and healthy appam with coconut or green chutney.

 

  1. Besan Cheelas

 

Ingredients: 1 cup of besan, finely chopped vegetables of your choice, finely chopped green chilies, 2 pinch turmeric powder, ½ teaspoon ajwain, ¼ teaspoon red chili powder, salt to taste, ½ cup water.

 

Method:

Mix all the dry ingredients well. Add ½ cup water and whisk it well. The batter should have a smooth consistency with no lumps. Heat a Non-Stick Tawa, and spread a little oil over it. Pour the batter with a ladle and gently spread it on the tawa. Cook the Cheela on medium flame until the top begins to look cooked. Flip your Cheela and cook the other side. Your tasty Cheela is now ready!

 

  1. Oats and Spinach Pancakes

Neither oats nor spinach make it to anyone’s ‘favorite foods’ list. And when you bring them together, it would sit in the corner of the dinner table – UNTOUCHED. But you whip them up into a pancake and it will turn into your favorite healthy breakfast.

 

Ingredients: 1 cup oats powder, ½ cup chopped spinach, 1-2 chopped green chilies, ½ chopped onion, ½ tsp ginger powder, ½ tsp red chili powder, 1 tsp cumin seeds, ¼ tsp turmeric powder, ¼ tsp asafoetida, Salt to taste, Water as required, 4-5 tsp vegetable oil.

 

Method:

Except for the vegetable oil, add all the ingredients to a large bowl. Pour water, mix them well to make a smooth batter. Let it rest for 10 minutes. Take a  Cast Iron Frypan, brush some oil and pour a ladleful of the batter on it. You will see bubbles forming on the pancake which means it is cooked well. Now flip the pancake and let the other side cook. Your Oats and Spinach Pancake is ready to be savored.

 

 

  1. Poha

 

Ingredients: 1.5 flattened rice, 1 teaspoon sugar, salt to taste, ¼ teaspoon turmeric powder, 1 pinch mustard seeds, 2 tablespoon, ½ cup finely chopped onions, 5 to 6 curry leaves, some chopped green chilies.

 

Method:

Use a strainer to rinse the flattened rice in water until they are soft. Add sugar, salt and turmeric to the rinsed poha and gently mix it with a spoon. Heat some oil in a pan and crackle the mustard seeds. Now sauté the onions till they become translucent. Add curry leaves and green chili. Sauté it for some time. Now add poha and mix gently. Cover the pan with a lid and let it steam for 2 minutes on slow flame. Yummy and healthy poha is ready!

 

  1. Banana, chocolate and coffee smoothie bowl

 

Ingredients: 2 frozen bananas, 1 cup milk, 1 tsp coffee powder, 1-2 tbsp cocoa powder, 1 tbsp honey, ¼ cup chocolate chips, 1 tsp chia seeds.

 

Method:

Add the frozen bananas, milk, honey, cocoa powder and coffee powder to a blender and blend them into a smooth smoothie paste. Take a bowl and pour the smoothie into it. Garnish it with chocolate chips and chia seeds. Add banana slices too (if you want). Your super quick and power-packed breakfast is ready!
