3 Delicious Cake Recipes for Christmas 2021
It’s that time of the year when your house fills up with fresh bakery-like aroma! Baking cakes has become a part of Christmas tradition in many Indian household. Christmas Fruit Cake
More popularly known as Kerala Plum Cake. This plum cake is very popular because it is easy to make.
Ingredients:
1 cup plain flour |
1/2 cup chopped cashew nuts |
Few black raisins |
Few mixed dry fruits (dates, cherries, etc) |
1/2 cup white sugar (for sugar syrup) |
2/3 cup unsalted butter, at room temperature |
3/4 cup white sugar (for cake batter) |
3 eggs, a pinch of salt |
1/2 tsp cinnamon powder |
1/4 tsp clove powder |
1 tsp baking powder |
1 tsp vanilla extract |
INSTRUCTIONS
Melt sugar slowly in a frypan on medium heat while continuously stirring until it turns into a deep dark caramel colour.
Turn off heat and add about 1/4 cup water to harden the sugar. Slowly heat the mixture for around 10 mins till the time the sugar crystals dissolve. Keep it aside to cool.
Pre-heat oven to 180°C.
Take dry fruits and nuts, and coat it completely with 3 Tbsp flour, and set it aside.
Combine the remaining flour, baking powder, spices, and salt nicely. Now, beat the butter and 3/4 cup sugar until fluffy (for ~10-13 mins). Add vanilla extract and mix until it is completely combined. Add 1 egg and beat. Then add a tiny bit of the flour mixture and fold. Alternate between the eggs and flour mixture until it’s all used up. Add the cooled caramel and coated dry fruits and gently fold in.
Grease the cake pan and pour the batter into it. Bake for ~50-55 mins until the top layer turns dark brown in colour. And Viola! the cake is ready!
Carrot Cake
This incredibly moist and utterly delicious cake will make you fall in love with carrot cakes. Most of the ingredients for this cake would probably be in your kitchen already.
Ingredients:
2 cups all-purpose flour |
2 tsp baking soda |
1 ½ cinnamon |
Salt |
1 ¼ cup oil |
Vanilla extract |
1 cup sugar |
4 large eggs |
3 cups hand grated carrots |

INSTRUCTIONS
Assemble all the dry ingredients in one bowl and wet ingredients in another. Whisk the dry and wet ingredients in their respective bowls until they are well blended. Fold the dry and wet ingredients together with the help of a spatula or a large spoon until you don’t see any streaks of flour. Add the carrots. You can also add nuts and raisins as per your taste and preference.
Heat the oven to 176°C. Now divide the batter between two buttered and floured cake pans and bake until done. It would take ~ 35 to 40 minutes to bake in an oven. Let it cool down, layer the cake, and then apply your favourite frosting on top of it. Remember, carrot cakes taste scrumptious and delicious even without the frosting!
Red Wine Cake
This super moist red wine cake is a perfect treat for self-indulgence on the Christmas Day.
Ingredients:
¾ cup all-purpose flour |
½ cup cocoa powder |
½ tsp baking powder |
Salt, 1 tsp vanilla essence |
1 ¼ cup oil |
¼ tsp cinnamon powder |
½ cup unsalted butter |
¾ cup sugar & ¼ cup brown sugar |
¾ cup red wine |
1 egg |
INSTRUCTIONS
Start with preheating the oven to 180°C. Take a parchment paper to line a loaf pan. Set it aside.
Now whisk together butter, sugars, vanilla in a bowl till it’s really creamy. Add the egg, cinnamon, salt, flour, baking soda and fold the ingredients well. Mix in the red wine and fold gently again.
Pour the mixture in the loaf pan and bake for ~30 to 40mins. Remove the loaf pan and let it cool down. To make it more delicious, mix the chocolate sauce, melted butter and chocolate chips together until its completely smooth. Pour the mixture over the cake and smooth the top. Chill the red wine cake for some time. The soft, moist and chocolate filled red wine cake is ready to be served!
